We know it can seem daunting at first, but preparing a delicious spicy tuna roll with the best fish in Orlando is surprisingly simple. Let Lombardi’s show you how easy this can be.

The first thing you’re going to need is some cooked sushi rice. We recommend using a rice cooker for an evenly cooked batch. The recipe we are looking at today makes two rolls, which are enough for two servings, but feel free to double up if you have more guests.

Ingredients:

  • 1 ½ cups of cooked rice
  • 4 ounces of tuna
  • 3 teaspoons of sriracha sauce
  • 2 teaspoons chopped scallions
  • ½ teaspoon sesame oil
  • 1 sheet nori (the seaweed)
  • 2 tablespoons of white roasted sesame seeds
  • Spicy mayonnaise (optional)
  • Bamboo rolling mat
  • Tezu (A mix of ¼ cup water and 2 teaspoons of rice vinegar, used for hand-dipping)

Steps

  1. Purchase your tuna, one of the best fish in Orlando, and cut it into ¼ inch cubes.
  2. Grab a medium bowl and combine your tuna, sriracha sauce, one teaspoon of the scallions, and the sesame oil.
  3. Cover the mat with plastic wrap. Place a sheet of nori on the mat with the shiny side down, and then wet your fingers with the tezu.
  4. Add ¾ cup of rice to the sheet, spreading evenly, and topping with the sesame seeds.
  5. Flip the sheet over so that the rice is facing down and line it up to the bottom edge of the mat.
  6. On the bottom portion of the sheet, add half of the tuna mix.
  7. Use your fingers to hold the contents of the roll as you begin to roll it up. Use the mat to help you roll until the sheet becomes a cylinder.
  8. Cut the roll in half and then into thirds for a total of six pieces. Add spicy mayo on top if you desire, and garnish with the remaining scallion.
