Spicy Pickled Mussels with Turnips and Greens

  1. Heat 1 tbsp of the oil in a large skillet over medium heat. Add shallots when the oil is hot. Stir shallots often--they should be completely soft in about 8 minutes. add garlic and ginger and continue to cook until the mixture is fragrant--about 2 minutes. Transfer this mixture to a medium bowl and set aside.
  2. Clean the pan and then heat the remaining oil over medium-high heat. Add the mussels and stir for 1 minute. Add wine and cover until the mussels open--about 3 minutes.
  3. Drain the mussels in a colander that's placed over a large mixing bowl to catch the cooked liquid. Remove the mussels from their shells; discard any mussels that do not open. Transfer the mussels to the bowl with the shallots and garlic; set aside. Strain the mussel juices through a fine mesh strainer over the mussels. Add the vinegar, chile oil, lime juice, soy sauce, sesame oil, and ground fennel seeds. Cover and refrigerate.
  4. While the mussels marinate, bring salted water to boil in a medium pot. Ass the turnips and cook until they're almost tender--about 2 minutes. Add the turnip greens and gook until they begin to wilt--about 1 minute. Use a spotted spoon to transfer the turnips and greens to a paper towel-lined sheet tray and let them dry. Add the turnips and greens to the pickled mussel mixture and allow it to continue marinating for at least 4 hours before serving.
  5. To serve, remove the pickled mussels from the refrigerator 1 hour prior to serving. This will allow them to warm to room temperature. Spoon the mussels into 4 small bowls and serve with grilled bread and cilantro sprigs.
