Sauteed Black Grouper with a Peach Relish
For a unique and out-of-this-world flavor, try sauteed black grouper with a sweet peach relish. This mild-flavored fish if perfectly complimented with the sweetness of the peach.

  1. Place fish in the pan and saute for 4 minutes, or until golden brown. Turn the grouper over and saute the other side for 2 minutes or until it's cooked to your desired specifications.
  2. Heat a large skilled over medium-high heat. Add canola oil to the pan--swirl it around to coat the surface.
  3. Combine radishes, chives, peaches, and serrano chile in a medium bowl.
  4. Combine the remaining 1/4 teaspoon salt, olive oil, lime juice, and honey in a small bowl. Stir with a whisk to evenly mix the dressing.
  5. Once appropriately whisked, drizzle this dressing over the peach mixture. Gently toss to evenly coat the mixture.
  6. Serve fish with relish lightly drizzled over the top.
