First things first, let’s talk about what you’ll need. We tend to serve this dish with steamed rice, so be sure to have some made by the time the shrimp is ready. The ingredients are very simple, all found at any large grocery store. You might have trouble finding the fish sauce, but that’s easily replaceable with salt. The main ingredient, the pound of shrimp, is, of course, available at Lombardi’s.


  • ¼ cup of water
  • ½ cup of vinegar
  • 3-4 cloves of garlic, chopped
  • ¼ teaspoon ground peppercorn
  • Fish sauce or salt, to taste
  • 2 cans of coconut milk
  • 1 pound of shrimp



  • Grab a medium size pot and add your water, vinegar, garlic, pepper, and fish sauce (or salt). Once mixed, add in your shrimp, which can be deveined and without the shell, but we prefer the shell for the enhanced flavor.
  • Let this rest covered for about an hour, without heat, so that the flavors can infuse into the shrimp.
  • Turn on the heat to medium and cook the shrimp until you’ve reduced the water mixture by half. Stir frequently and keep the lid off so the vapor can escape.
  • Add your cans of coconut milk. You may use low-fat coconut milk if desired.
  • Allow the sauce to thicken for about 20-30 minutes.
  • Add more fish sauce (or salt) and pepper if needed.
  • Serve with steamed rice.
