risotto-421391_1920One of the most romantic things couples can do is cook for each other; consuming food is at the heart of our society and making it is a wonderful way to show someone just how much you care for them. Today, we’re going to show you how you can take advantage of the best seafood in Orlando and prepare an elegant lobster risotto dish for your special someone this Valentine’s Day.

Some say that lobster is an aphrodisiac, to which we cannot comment, but we simply love it for its great taste and excellent nutritional attributes. Here are the ingredients you’ll need to prepare this recipe:

  • ½ lb lobster meat
  • 2 cups of short-grain rice (e.g. Arborio or Carnaroli)
  • 4 tablespoons of olive oil
  • 2 shallots
  • 2 garlic cloves
  • 1 tablespoon of parsley
  • 1 pinch of saffron
  • ¼ cup of white wine
  • 1 quart stock (lobster, fish, or chicken)
  • salt to taste

  • Proportion half of your lobster meat and chip it finely.
  • In a small mixing bowl, add the wine and saffron, ensuring it is crushed and mixed well.
  • Heat a medium-sized pot to medium-high heat and sauté the finely chopped shallots in the olive oil, but ensure they do not color.
  • Mince the garlic and add it along with the rice to your pot, stirring constantly for about a minute.
  • Next, add your chopped lobster meat and ¼ teaspoon salt along with the white wine and bring to a boil.
  • Keep stirring every 90 seconds, allowing the wine to boil down. Bring the heat to medium and add your stock ½ cup at a time.
  • Repeat the process until the rice is cooked al-dente, with a little bite to it.
  • Finally, add the rest of the lobster, along with the parsley and salt to taste.
  • We recommend you serve this dish with a white wine, such as a Riesling.
