This Cajun shrimp and crawfish etouffee is as close as you can get to Louisiana’s southern cuisine while staying in Florida! Let Lombardi’s Seafood Market guide you step by step as you prepare this recipe with the Orlando seafood you’ve purchased.

Before you start preparing this delicious, authentic, heck of a Cajun meal, you’re going to need to do some shopping. The list is long, but you’ll likely have many of these items already in your fridge.

Ingredients:

  • ⅓  cup vegetable oil
  • ¼ cup all-purpose flour
  • 1 green bell pepper
  • 1 onion
  • 2 cloves garlic
  • 2 stalks celery
  • 2 tomatoes
  • 2 tablespoons Louisiana hot sauce
  • 1/3 teaspoon cayenne pepper
  • ½ teaspoon ground black pepper
  • 2 tablespoons seafood seasoning
  • 1 cup fish stock
  • 1 lb crawfish tails
  • 1 pound medium shrimp, deveined and peeled

Steps:

 

  • Chop up your veggies, including the green bell pepper, onion, celery, tomatoes, and mince your garlic. Set this to the side.
  • Grab a heavy skillet and add your oil, heating it over medium heat.
  • Slowly add your flour, stirring constantly, until it turns a dark brown, similar to the color of peanut butter. This is your roux, an essential part of the dish, which should take anywhere from 15-20 minutes to prepare. Make sure not to burn it.
  • Next, add your chopped onion, garlic, celery and bell pepper until it softens, about five minutes. Then add your tomatoes, fish stock, and seafood seasoning. Bring the heat to low and keep the mix simmering over the next 20 minutes, stirring on occasion.
  • Add your cayenne pepper (optional), black pepper, and the seafood.
  • Cook everything for 10 more minutes, or until your shrimp turns that pink color we all know and love.
